Peas bring something new to the table that microgreens generally don’t. They are hardier than your average microgreen, allowing new ways for preparation. What I always like to tell people about peas are they are best cut up and cooked in stir fry or scrambled eggs 🥚. I do it a lot, it’s great.

If you are eating for nutrition, you shouldn’t heat up plants. However my favorite ways of eating peas often come with a bit of heat.🔥

Peas bring a lot of amazing properties to the table. Taking a look at the nutrition facts from USDA we get a load of goodies.

First off, they are rich in Vitamins A-C. Pea shoots don’t just have them but if you ate a cup of pea shoots you’ll get 20-50% of these vitamins for the day. It’s a quick and easy way to make sure your are getting your fix.

Vitamin B is a wide range of things, so to be more specific:

  • B1 – 23%
  • B2 – 14%
    • All important for turning Cheez-itz into energy (or any carb, protein and fat)
  • B5 – 25%
  • B3 – 23%
    • Helps blood, brain and skin health
  • B5 – 25%
    • Helps produce red blood cells and hormones
  • B6 – 19%
    • Brain and nervous system health
  • B9 – 43%
    • Healthy cells, happy life.

Peas are also loaded with minerals, such as those that American’s are typically deficient in.

Copper – Want to keep most of your systems developed? Peas can make up 36% of your daily nutritional needs of copper.

Iron – Like Oxygen? Your cells do too and need iron to build the logistics network in our bodies.

Magnesium – helps us regulate so many processes, and most American’s are deficient in. If you eat a cup of peas you can get 36% of your daily needs in this.

Manganese – Maintain those bones by getting manganese found in peas. You can get 23% of your daily needs from peas alone

Last and my favorite are the anti-oxidants called flavonoids. If your in the market to fight off cardiovascular disease, cancer, infections and inflammation. You’ll probably want to get antioxidants, and it just so happens peas have them.

Do We Even Recycle Plastic in America?

We suck at recycling plastic.

Recycling plastic is not working. We used to export our plastic to China to recycle, that stopped happening in 2018. We peaked in being able to recycle a measly 10% of our plastics in 2014, to a now less than 5%. 🤬😡💢

It’s disappointing, and makes me happy that the containers we provide are not plastic, but made of corn. We just need suppliers to ramp up production of these products because they are way too expensive. Get the cost down and we can honestly get rid of disposable plastic. I would bet many don’t even know that the container is corn not plastic. Check the back of the container next time you get it. 😉
