Weird thing I learned this week. If you look at genetics. Humanβs are more closely related to mushrooms than we are to plants. Makes you pause for a moment when you also realize mushrooms have a meaty texture. π€

Mushrooms that we have in the store arenβt foreign foods. They actually grow out in the wild here! Thing is they look a little different when they age compared to what we harvest. π²π³
The mid-west and probably most of the country really didnβt have a lot of amazing mushrooms available until more recently, which is incredible given the amazing nutrition mushrooms give to us. πΊοΈ
