Kale is just a super star. ⭐⭐⭐
Not something I cover enough because I have an obsession with broccoli but something I also eat a ton of.
Kale itself is loaded with vitamins, to name a few are Vitamin A, C and K. All of these are awesome for maintaining healthy skin, immune function, and bone health.
Vitamin A is also great for maintaining healthy eyesight (is that why we say carrots make us see better? 🥕)
Kale is also of course rich in antioxidants, namely beta-carotene, lutein and zeaxanthin. All of these clean up free radicals and reduce inflammation (which increase risk of cancer). Deputy Kale is on patrol 🔫🥬
Minerals? Kale has plenty of calcium, iron, potassium and of course magnesium. I talk about magnesium the most because most Americans have a deficiency in it!
Magnesium is involved in 300+ chemical reactions in our body such as muscle and nerve function, blood sugar regulation, blood pressure regulation, protein synthesis, and it is important for bone health, heart health, and making energy! Eat your magnesium darn it! It’s just eating your leafy GREENS 😡🤬
By the way, for those of you that are working on beach body like us kale has virtually no calories. We like to think of it as ‘free food’ which makes it tastier 🤤
Microgreen or Adult Kale? 🤔
Microgreen kale and adult kale both have their perks. If you are looking for the micro nutrients (all the stuff listed above) then microgreen kale is the play. It honestly is far milder, making it a lot easier to add into anything you are eating.
Eating adult kale is also important. Reason being is that plant fiber is far more in the larger leafy greens compared to the young microgreens. There is simply a lot more plant.
PLANT FIBER IS SUPER IMPORTANT
Most Americans are deficient in it because WE DONT EAT OUR GREENS 🤬😡 EAT YOUR GREENS!
Plant fiber helps healthy bowel movements, prevents constipation, and improves overall digestive health. It is also amazing for controlling blood sugar, lowering cholesterol, and because it is FIBER you eat less because you are FULL.
The deficiencies we have in America are easily solved, it makes me RAGE. Ugh I need to go make a smoothie.
